So in my office we're having a "Biggest Loser" contest and my house is full of healthy food right now and I'm just tired of healthy and wanted a splurge. I found a yellow cake mix in my food storage so I decided to make my favorite fast cookies.
If you know me at all then you already know that I hate to bake--but these are just so quick and easy--Even I'll make them on occasion. They're yellow cake mix snicker doodles.

All they take is: one yellow cake mix, 2 eggs, 1/3 cup oil, 2 tsp Vanilla, 1/2 C sugar, 2tsp Cinnamon
You mix the cake mix and all liquid ingredients then roll them into balls, roll the balls in the combined Cinnamon sugar until cover. Plop on cookie sheets for 8 minutes at 375.

I really had no idea you could make cookies out of yellow cake mix! I'm amazed and stunned!
